Rack of Lamb

We decided to get fancy the other night...so we had ourselves some wonderful rack of lamb. We roasted it with some simple seasoning and made a fiery sauce for it to lay in. Also, there was some roasted vegetables including Brussels sprouts and carrots. Couscous accompanied with basil and sun dried tomatoes. It was very good!

Some Drinks

Udon Noodles

Sometimes I like to pretend that I can cook Asian food. This is simple udon noodles with bok choy, carrots, seasame seeds, snap peas, green beans, broccoli, shitaki mushrooms, seasame oil and soy sauce. I also used tofu in it, which was actually a very nice texture and tased great. Enjoy!

Oh...Stuffed Artichokes

Okay, so this is a really an appetizer, but I always can make those an actual meal. The stuffing consisted of turkey italian sausage, garlic, red onion, sundried tomatoes, basil pesto, dried bread crumbs, olive oil, spinach and parmesan cheese. Scrapping the inner artichoke was not easy, but it was definatley worth it. This was great!

White Chili

So last week, for my weekly dinner, I made myself and my boyfriend white chili. So simple...ground turkey, chicken broth, leeks, mushroom, onions, carrots, cumin, chili powder, great northern beans, and beer. Or eles it wouldn't be chili. We made some salsa verde on the side. Enjoy!
